Nowadays, her three daughters run the show. Marina takes care of the kitchen while Mar and Maribel run the room. The women maintain a friendly atmosphere typical of the Pallars region. Its modern yet traditional cuisine is in a constant state of evolution and renewal, although one thing always remains the same: a focus on quality local produce. Standout dishes include crispy mushrooms, Tavascan river trout stuffed with almonds, eggplant stuffed with diced xisqueta lamb, and chiretta brochette with reducción de ratafía (a traditional liquor), and Surp cream cheese.
